A very simple yet delicious, healthy version of stroganoff.

Ingredients

boneless, skinless chicken breasts, pounded thin
3 Tbsp
olive oil, extra virgin
1 large
onion, thinly sliced
8 oz
fresh sliced mushrooms
1-1/4 c
light sour cream
salt and pepper to taste
1 Tbsp
chopped fresh parsley
1/2 lb
cooked, drained no-yolk noodles

How to Make Healthy chicken stroganoff

Step-by-Step

  • 1Cut chicken into strips. Heat 2 tbsp oil in lg skillet, over medium heat. Add onion. Cook until softened. Add mushrooms, and cook until browned.
  • 2Remove veggies from skillet. Add remaining oil to skillet. Cook chicken in oil in small batches for about 4 mins. Place mushrooms and onion back into skillet.
  • 3Season w/ salt and pepper. Stir in sour cream. Bring to a boil, stirring for 1-2 mins. Sprinkle w/ parsley. Serve over noodles.
