Ingredients
- 4 - boneless, skinless chicken breasts, pounded thin
- 3 tablespoons olive oil, extra virgin
- 1 large onion, thinly sliced
- 8 ounces fresh sliced mushrooms
- 1-1/4 cup light sour cream
- - salt and pepper to taste
- 1 tablespoon chopped fresh parsley
- 1/2 pound cooked, drained no-yolk noodles
How To Make healthy chicken stroganoff

Step 1Cut chicken into strips. Heat 2 tbsp oil in lg skillet, over medium heat. Add onion. Cook until softened. Add mushrooms, and cook until browned.

Step 2Remove veggies from skillet. Add remaining oil to skillet. Cook chicken in oil in small batches for about 4 mins. Place mushrooms and onion back into skillet.

Step 3Season w/ salt and pepper. Stir in sour cream. Bring to a boil, stirring for 1-2 mins. Sprinkle w/ parsley. Serve over noodles.
