grilled hawaiian chicken

This was my Grandfathers speciality, he got it from better homes and gardens a long time ago. we used to go on camping/fishing trips and he would grill up his famous Hawaiian Chicken,but the real kicker with this recipe, is that Grandpa's sauce for the chicken, NEVER I mean never tasted the same as the written recipe that he gave us.(It's my personal opinion that he had a secret that he never shared with anyone):) I like to serve mine with Baked potatoes with sour Cream.

Ingredients

  • CHICKEN
  • 1 large split whole chicken or hind quarters
  • 1 cup oil
  • 2 teaspoons salt
  • 1/2 teaspoon pepper
  • HAWAIIAN SAUCE
  • 1 cup crushed pineapple (drain and reserve juice)
  • 1 cup packed brown sugar
  • 2 tablespoons lemon juice
  • 2 tablespoons mustard
  • 1/2 teaspoon salt
  • 1/8 teaspoon pepper
  • 2 tablespoons pinapple juice

How To Make grilled hawaiian chicken

  • Step 1
    Fire up the grill ~!!!!!!! cut up a whole chicken, or get a large batch of hind quarters, in a small bowel mix oil,salt and pepper, brush on chicken to Bar-B-Que. Rotate chicken till cooked fully through.
  • Step 2
    While grilling the chicken, mix together the ingredients of the Hawaiian Sauce, and set aside.
  • Step 3
    Once chicken is fully cooked, brush on Hawaiian Sauce ,flip chicken, and brush on sauce on the other side and repeat till golden brown on both sides! (save some sauce for plating) , Plate and pour a Tbl.of sauce ontop of the chicken, I serve baked potatoe's and sour cream. Enjoy!!!!!
