This is one of my comfort foods, I change the meats to keep it different. Not only can I get my picky eater son to eat this, but my husband's co-workers ask for it whenever there is an office buffet lunch in the works! It's great for a rainy day cuddle on the couch meal :) Enjoy!

Ingredients

  • 1/2 cup vegetable oil
  • 1/2 cup all purpose flour
  • 1 large onion, diced
  • 1/2 cup fresh parsley, chopped
  • 1/2 cup celery, chopped
  • 1/2 cup green bell pepper, chopped
  • 1/2 cup red bell pepper, chopped
  • 1/2 cup scallion, sliced
  • 6 cloves garlic, minced
  • 4 cups chicken broth
  • 1 teaspoon salt
  • 1 teaspoon creole seasoning
  • 2 pounds any meats: sausage, shrimp or chicken. you can also mix them up too.

How To Make gumbo

  • Step 1
    In large pot combine oil and flour, cook over medium/high heat until it's very brown in color, stirring constantly
  • Step 2
    Add onions, parsley, celery, bell peppers, scallions and garlic to pot and cook until vegetables are tender. Stir regularly
  • Step 3
    Add broth, salt and creole seasoning.
  • Step 4
    Cover and simmer 15 minutes, stirring occasionally.
  • Step 5
    Add your chosen meat, or combination of meats, simmer until meat is cooked through.
  • Step 6
    Serve over rice or enjoy as a stew :)
