This is one of my comfort foods, I change the meats to keep it different. Not only can I get my picky eater son to eat this, but my husband's co-workers ask for it whenever there is an office buffet lunch in the works! It's great for a rainy day cuddle on the couch meal :) Enjoy!

Ingredients
- 1/2 cup vegetable oil
- 1/2 cup all purpose flour
- 1 large onion, diced
- 1/2 cup fresh parsley, chopped
- 1/2 cup celery, chopped
- 1/2 cup green bell pepper, chopped
- 1/2 cup red bell pepper, chopped
- 1/2 cup scallion, sliced
- 6 cloves garlic, minced
- 4 cups chicken broth
- 1 teaspoon salt
- 1 teaspoon creole seasoning
- 2 pounds any meats: sausage, shrimp or chicken. you can also mix them up too.
How To Make gumbo

Step 1In large pot combine oil and flour, cook over medium/high heat until it's very brown in color, stirring constantly

Step 2Add onions, parsley, celery, bell peppers, scallions and garlic to pot and cook until vegetables are tender. Stir regularly

Step 3Add broth, salt and creole seasoning.

Step 4Cover and simmer 15 minutes, stirring occasionally.

Step 5Add your chosen meat, or combination of meats, simmer until meat is cooked through.

Step 6Serve over rice or enjoy as a stew :)
