Got this recipe from my brother Jeremy who loves to cook and bake and is excellent at it!
These make a delicious appetizer.

Ingredients

  • 1 c
    pineapple juice
  • 1/2 c
    packed light brown sugar
  • 1/3 c
    lite soy sauce
  • 2 lb
    chicken breast tenderloins, or chicken breasts cut into strips
  • ·
    skewers

How to Make Grilled, skewered pineapple chicken strips

Step-by-Step

  1. In saucepan over medium heat, mix juice, brown sugar and soy sauce. Remove from heat just before it boils.
  2. Place chicken in lg shallow bowl. Pour marinade over chicken, refrigerate 30 min.
  3. Spray grill grates w/ cooking spray. Heat grill to medium heat. Thread chicken strips onto skewers lengthwise. Grill chicken about 5 min per side. Watch closely so they don't burn, because they cook quick!
