If looking for a light, tasty dish to be accompanied by some fresh veggies or salad, this one will fill the bill. The original recipe called for overnight marinating, but two hours gave me a wonderful taste.

Ingredients

  • 2 - boneless, skinless chicken breasts, halved, butterfly-style
  • 1/3 cup olive oil
  • 1/4 cup fresh squeezed lemon juice
  • 1/2 - onion, chopped
  • 2 cloves garlic, minced
  • 1 teaspoon montreal steak seasoning
  • 1/2 teaspoon lemmon pepper
  • 1/2 teaspoon kosher salt
  • 1 tablespoon italian seasoning

How To Make grilled lemon chicken

  • Step 1
    Combine all ingredients, except chicken in a bowl.
  • Step 2
    Cut chicken breasts in half, butterfly-style, creating two thin pieces of chicken from each breast.
  • Step 3
    Place chicken pieces in a zip lock bag and pour the marinate over. Close bag and massage chicken to insure marinate covers each piece. Refrigerate and massage chicken several times over a period of two or more hours.
  • Step 4
    Place chicken on a pre-heated grill, cooking for about five minutes per side.
