If looking for a light, tasty dish to be accompanied by some fresh veggies or salad, this one will fill the bill. The original recipe called for overnight marinating, but two hours gave me a wonderful taste.

boneless, skinless chicken breasts, halved, butterfly-style
1/3 c
olive oil
1/4 c
fresh squeezed lemon juice
1/2
onion, chopped
2 clove
garlic, minced
1 tsp
montreal steak seasoning
1/2 tsp
lemmon pepper
1/2 tsp
kosher salt
1 Tbsp
italian seasoning

How to Make Grilled Lemon Chicken

Step-by-Step

  • 1Combine all ingredients, except chicken in a bowl.
  • 2Cut chicken breasts in half, butterfly-style, creating two thin pieces of chicken from each breast.
  • 3Place chicken pieces in a zip lock bag and pour the marinate over. Close bag and massage chicken to insure marinate covers each piece. Refrigerate and massage chicken several times over a period of two or more hours.
  • 4Place chicken on a pre-heated grill, cooking for about five minutes per side.
