If looking for a light, tasty dish to be accompanied by some fresh veggies or salad, this one will fill the bill. The original recipe called for overnight marinating, but two hours gave me a wonderful taste.
1Combine all ingredients, except chicken in a bowl.
2Cut chicken breasts in half, butterfly-style, creating two thin pieces of chicken from each breast.
3Place chicken pieces in a zip lock bag and pour the marinate over. Close bag and massage chicken to insure marinate covers each piece. Refrigerate and massage chicken several times over a period of two or more hours.
4Place chicken on a pre-heated grill, cooking for about five minutes per side.
