Grilled Fajitas

Colleen Sowa

Our family loves this recipe... we make it often. We have made the meat and veggies on the grill and froze it for a cold winter's day too...

This allows everyone to pick out what they want for topping off their tortilla!

We also save the left overs for other recipes.

*** We have made these with pork, chicken, beef and even ground beef.

How to Make Grilled Fajitas

  1. MEAT:

On Grill over Medium heat, cook the flank steak. Slice the meat thin on a diagnol.
  2. Vegetables:

Grill the peppers whole, then cut them into thin strips or chop up.

Grill the onion after cutting into quarters. Then slice into strips or chop up.
  3. Spices:

Combine all the spice/gravy ingredients together in the same sauce pan as the cilantro and garlic. Cook on the grill until cooked and gravy forms. (If you want to add more water during cooking that is fine).
  4. Add the meat to the gravy in sauce pan. Stir to coat the meat.
  5. Add the veggies to the gravy and meat in sauce pan. Stir to coat the veggies.
  6. Flour Tortillas:

Either purchase or make from scratch flour tortillas. Place them on the grill to get them warm and get grill marks (optional).
