Our family loves this recipe... we make it often. We have made the meat and veggies on the grill and froze it for a cold winter's day too... This allows everyone to pick out what they want for topping off their tortilla! Ingredients

  • MEAT
  • 2-3 pounds beef flank steak grilled (then cut into thin strips on diagnal
  • VEGETABLES
  • 1 large each: red, green and yellow bell peppers grilled whole (after grilling cut in strips or chopped)
  • 2 large onions grilled in 1/4's (then cut in strips or chopped)
  • 1/2 cup cilantro, fresh (minced fine)
  • 4-6 cloves garlic (minced fine)
  • SPICES
  • 2 large limes (juice and zest) (can use lemon)
  • 1 teaspoon ground cumin
  • 1 teaspoon garlic powder
  • 1/2 teaspoon each: ground cayenne pepper and ground black pepper
  • 2 packages au jus gravy mix (use 2 pkgs but use directions as if doing 1 pkg.)
  • TORTILLAS
  • 1 package (20 to a package) small flour tortillas
  • OPTIONAL
  • - shredded cheese of choice
  • - beans and rice, refried beans
  • - guacamole, sour cream, salsa
  • - lettuce

How To Make grilled fajitas

  • Grilled flank steak in gravy.
    Step 1
    MEAT: On Grill over Medium heat, cook the flank steak. Slice the meat thin on a diagnol.
  • Grilled Vegetables.
    Step 2
    Vegetables: Grill the peppers whole, then cut them into thin strips or chop up. Grill the onion after cutting into quarters. Then slice into strips or chop up.
  • Step 3
    Spices: Combine all the spice/gravy ingredients together in the same sauce pan as the cilantro and garlic. Cook on the grill until cooked and gravy forms. (If you want to add more water during cooking that is fine).
  • Grilled flank steak in gravy.
    Step 4
    Add the meat to the gravy in sauce pan. Stir to coat the meat.
  • Grilled Vegetables.
    Step 5
    Add the veggies to the gravy and meat in sauce pan. Stir to coat the veggies.
  • whole wheat flour tortilla.
    Step 6
    Flour Tortillas: Either purchase or make from scratch flour tortillas. Place them on the grill to get them warm and get grill marks (optional).
  • Step 7
    Optional: Cheese, shred the cheese of choice for a topping.
  • Refried beans.
    Step 8
    Optional: Refried Beans
  • Beans and rice.
    Step 9
    Optional: Beans and rice
  • This is my pineapple salsa.
    Step 10
    Optional: Salsa, Sour Cream, Guacamole and lettuce.
