Grilled Chicken Pizza

Sherry Price

This pizza is out of this world. I use the burrito shells but you can use a thicker dough if you like. Also, you can add or subtract any veggie to your taste. No matter what you add, within reason, I don't think it could hurt this pizza.

Blue Ribbon Recipe

Notes from the Test Kitchen:
This pizza recipe is a great way to use leftover chicken and it's fab if you're cooking for only one or two. But, this could easily be doubled or tripled if cooking for a crowd. I loved the flavor combination of bacon ranch, chicken, and cheese. Customize these pizzas based on your favorite toppings. It's a simple quick lunch or dinner.

1 medium
boneless chicken breast (frozen or fresh) grilled and well chopped in food processor
2 Tbsp
ranch dressing with bacon (if desired)
1/2 small
onion (chopped small)
1/2 small
tomato (diced)
1 scoop(s)
Mexican blend shredded cheese
2 dash(es)
Creole seasoning
1 1/2 dash(es)
salt and pepper
1 medium
burrito shell or soft taco shell
may add any other vegetable you like

1This recipe is for a single size pizza, if you want larger pizzas, add more of each.
2Preheat oven 450 degrees. Lay out shell or pizza dough on flat surface, put ranch dressing on shell as the sauce.
3Add chopped chicken, onion, tomato, salt and pepper, Creole seasoning, and cheese.
4Place in 450-degree oven for 5 minutes or until the edges are crispy and golden brown.
