The coconut milk and lime really impart a tropical flavor to the chicken. Feel free to add the optional ingredients to enhance the flavor a bit more. *Marinating time is not included in prep time.

Ingredients

  • 1 1/4 cups canned coconut milk
  • 1/3 cup fresh lime juice
  • 1 1/2 pounds boneless, skinless chicken breasts cut into 1 inch cubes
  • salt and pepper to taste
  • 2 tablespoons finely chopped fresh cilantro
  • optional: add 1 stalk lemongrass and/or one 2" piece of fresh ginger, peeled and grated

How To Make grilled chicken in lime, coconut milk & cilantro

  • Step 1
    In a large container, mix the coconut milk and lime juice. Add the chicken and mix well. Refrigerate for a minimum of 4 hours or overnight.
  • Step 2
    Remove the chicken from the marinade shaking off excess marinade. Thread the cubes of chicken onto skewers. Season well with salt and pepper.
  • Step 3
    Place the skewers on the grill about 5-6 inches from heat source. Grill, turning often, until lightly browned and cooked through.
  • Step 4
    Remove from the grill and sprinkle evenly with cilantro.
