Brining of the chicken in this recipe is an extra step. Along with sautéed grilled apples and onions, it's what gives this sandwich such great flavor.

There's nothing boring about this delicious grilled chicken club sandwich. The chicken breasts are soaked in a brine, making them tender. Once grilled, the chicken breasts are juicy. They're topped with a sweet mixture of caramelized onions and apples. Then slices of smoky bacon, provolone cheese, lettuce, and tomatoes. What amps the flavor even more is the fresh, tart herbed mayonnaise on the ciabatta rolls. Fantastic!

Ingredients

  • CHICKEN BRINE
  • 4 boneless chicken breast
  • 8 cups water
  • 1/2 cup Kosher salt
  • HERB MAYONNAISE
  • 6 tablespoons mayonnaise
  • 2 tablespoons basil
  • 2 tablespoons cilantro
  • 2 tablespoons tarragon
  • salt, to taste
  • black pepper, to taste
  • lemon juice, to taste
  • APPLES/ONIONS MIXTURE
  • 1 cup sliced apples
  • 1 cup sliced onions
  • 2 tablespoons olive oil
  • FOR SANDWICHES
  • 4 ciabatta rolls, cut in half horizontally
  • 8 slices thick-cut apple wood-smoked bacon, cooked
  • 1 head bibb lettuce, washed and dried
  • 4 slices provolone cheese
  • 1 roma tomato, sliced

How To Make grilled chicken club sandwich

  • Add the chicken breasts to a Kosher salt and water brine.
    Step 1
    Mix the brine ingredients in a large bowl or pot. Place the chicken breasts in the bowl. Place in the fridge for 6 hours.
  • Mix mayonnaise and herbs in a small mixing bowl and place in the refrigerator.
    Step 2
    For the herb mayonnaise, mix mayonnaise and herbs in a small mixing bowl and place in the refrigerator.
  • Grill the chicken breasts until cooked.
    Step 3
    Once you remove the chicken from the brine, rinse it and pat it dry. Grill chicken until done.
  • Saute onions and apples in olive oil until caramelized.
    Step 4
    Sauté the onion and apples in olive oil until they caramelize. Remove and place in a small bowl.
  • Add herbed mayonnaise to the bread.
    Step 5
    Place the rolls on a clean work surface. Spread about 1 Tbsp of the herb mayonnaise on each half.
  • Place the sliced chicken breast. Add two slices of bacon and cheese.
    Step 6
    On the bottom halves, place the sliced chicken breast. Add two slices of bacon and cheese.
  • Top with lettuce and the apple/onion mixture.
    Step 7
    Top with several lettuce leaves and 1/4 of the onion/apple mixture.
  • Top half of each roll. Grill until warm and the cheese has melted.
    Step 8
    Close the sandwiches with the top half of each roll. Grill until warm and the cheese has melted.
