Ingredients
- 3 cups brine
- 4 - boneless chicken breast
- HERB MAYONNAISE
- 6 tablespoons mayonnaise
- 2 tablespoons each of basil,cilantro ,tarragon
- dash salt and pepper and lemon juice
- FOR SANDWICHES:
- 1 cup sliced apples
- 1 cup grilled onion
- 2 tablespoons olive oil
- 8 slices cook thick cut apple wood-smoked bacon
- 4 - ciabatta rolls, cut in half horizontally
- 1 - head of bibb lettuce, wahed and dried
- 4 slices provolone cheese
- 1 - roma tomatoe
How To Make grilled chicken club sandwich

Step 1For Herb Mayonnaise: mix mayonnaise and herbs to gather in a small mixing bowl and place in refrigerator. Brine the chicken breast in the refrigerator for at lease 6 hours.

Step 2Once you remove chicken from brine , rinse off chicken and pat dry. Grill chicken until done. sauté onion and apples in olive oil until caramelize. remove and place in small bowl.

Step 3Place the rolls on a clean work surface and spread about 1 tablespoon of the Herb Mayonnaise on each half. On the bottom halves place the sliced chicken breast and add two slices of bacon and cheese.

Step 4Top with several lettuce leaves and 1/4 of onion mixture.close the sandwiches with top half of each roll and grill until warm and cheese has melted.
