Brining of the chicken in this recipe is an extra step. Along with sautéed grilled apples and onions, it's what gives this sandwich such great flavor.

Ingredients

  • CHICKEN BRINE
  • 4 boneless chicken breast
  • 8 cups water
  • 1/2 cup Kosher salt
  • HERB MAYONNAISE
  • 6 tablespoons mayonnaise
  • 2 tablespoons basil
  • 2 tablespoons cilantro
  • 2 tablespoons tarragon
  • salt, to taste
  • black pepper, to taste
  • lemon juice, to taste
  • APPLES/ONIONS MIXTURE
  • 1 cup sliced apples
  • 1 cup sliced onions
  • 2 tablespoons olive oil
  • FOR SANDWICHES
  • 4 ciabatta rolls, cut in half horizontally
  • 8 slices thick-cut apple wood-smoked bacon, cooked
  • 1 head bibb lettuce, washed and dried
  • 4 slices provolone cheese
  • 1 roma tomato, sliced

How To Make grilled chicken club sandwich

  • Step 1
    Mix the brine ingredients in a large bowl or pot. Place the chicken breasts in the bowl. Place in the fridge for 6 hours.
  • Step 2
    For the herb mayonnaise, mix mayonnaise and herbs in a small mixing bowl and place in the refrigerator.
  • Step 3
    Once you remove the chicken from the brine, rinse it and pat it dry. Grill chicken until done.
  • Step 4
    Sauté the onion and apples in olive oil until they caramelize. Remove and place in a small bowl.
  • Step 5
    Place the rolls on a clean work surface. Spread about 1 Tbsp of the herb mayonnaise on each half.
  • Step 6
    On the bottom halves, place the sliced chicken breast. Add two slices of bacon and cheese.
  • Step 7
    Top with several lettuce leaves and 1/4 of the onion/apple mixture.
  • Step 8
    Close the sandwiches with the top half of each roll. Grill until warm and the cheese has melted.
