Ingredients
- CHICKEN BRINE
- 4 boneless chicken breast
- 8 cups water
- 1/2 cup Kosher salt
- HERB MAYONNAISE
- 6 tablespoons mayonnaise
- 2 tablespoons basil
- 2 tablespoons cilantro
- 2 tablespoons tarragon
- salt, to taste
- black pepper, to taste
- lemon juice, to taste
- APPLES/ONIONS MIXTURE
- 1 cup sliced apples
- 1 cup sliced onions
- 2 tablespoons olive oil
- FOR SANDWICHES
- 4 ciabatta rolls, cut in half horizontally
- 8 slices thick-cut apple wood-smoked bacon, cooked
- 1 head bibb lettuce, washed and dried
- 4 slices provolone cheese
- 1 roma tomato, sliced
How To Make grilled chicken club sandwich

Step 1Mix the brine ingredients in a large bowl or pot. Place the chicken breasts in the bowl. Place in the fridge for 6 hours.

Step 2For the herb mayonnaise, mix mayonnaise and herbs in a small mixing bowl and place in the refrigerator.

Step 3Once you remove the chicken from the brine, rinse it and pat it dry. Grill chicken until done.

Step 4Sauté the onion and apples in olive oil until they caramelize. Remove and place in a small bowl.

Step 5Place the rolls on a clean work surface. Spread about 1 Tbsp of the herb mayonnaise on each half.

Step 6On the bottom halves, place the sliced chicken breast. Add two slices of bacon and cheese.

Step 7Top with several lettuce leaves and 1/4 of the onion/apple mixture.

Step 8Close the sandwiches with the top half of each roll. Grill until warm and the cheese has melted.
