Ingredients

1 pkgpork & chicken traditional brats
-
2 tspall-purpose greek seasoning
-
·juice & zest of 1 lemon
-
3 Tbspextra virgin olive oil
-
1/2 tspcourse black pepper
-
2 mediumwhite eggplant fingers, sliced 1 inch thick
-
2 mediumgreen eggplant fingers, sliced 1 inch thick
-
1/2 smallred onion, cut 1 inch
-
18cherry tomatoes
-
12-18kalamata olives, pitted
-
·aged balsamic vinegar to drizzle
-
2 ozherb goat cheese, crumbles
-
·italian parsley, chopped for garnish
How to Make Greek Chicken & Pork Brat Kabobs
- Soak 6-8 bamboo skewers in water for 30 minutes. Toss all the veggies in a bowl with olive oil, Greek seasoning, lemon juice, zest and pepper. Assemble skewers: eggplant, tomatoes, sausage, onion & olives. Repeat until skewer is complete Grill on a medium high heat for 15 minutes or until juices run clear, so turning at least once. Remove from grill and drizzle aged balsamic and top with goat cheese and parsley
