  • 1 pkg
    pork & chicken traditional brats
  • 2 tsp
    all-purpose greek seasoning
  • ·
    juice & zest of 1 lemon
  • 3 Tbsp
    extra virgin olive oil
  • 1/2 tsp
    course black pepper
  • 2 medium
    white eggplant fingers, sliced 1 inch thick
  • 2 medium
    green eggplant fingers, sliced 1 inch thick
  • 1/2 small
    red onion, cut 1 inch
  • 18
    cherry tomatoes
  • 12-18
    kalamata olives, pitted
  • ·
    aged balsamic vinegar to drizzle
  • 2 oz
    herb goat cheese, crumbles
  • ·
    italian parsley, chopped for garnish

How to Make Greek Chicken & Pork Brat Kabobs

Step-by-Step

  1. Soak 6-8 bamboo skewers in water for 30 minutes. Toss all the veggies in a bowl with olive oil, Greek seasoning, lemon juice, zest and pepper. Assemble skewers: eggplant, tomatoes, sausage, onion & olives. Repeat until skewer is complete Grill on a medium high heat for 15 minutes or until juices run clear, so turning at least once. Remove from grill and drizzle aged balsamic and top with goat cheese and parsley
