Ingredients
- 1 package pork & chicken traditional brats
- 2 teaspoons all-purpose greek seasoning
- - juice & zest of 1 lemon
- 3 tablespoons extra virgin olive oil
- 1/2 teaspoon course black pepper
- 2 medium white eggplant fingers, sliced 1 inch thick
- 2 medium green eggplant fingers, sliced 1 inch thick
- 1/2 small red onion, cut 1 inch
- 18 - cherry tomatoes
- 12-18 - kalamata olives, pitted
- - aged balsamic vinegar to drizzle
- 2 ounces herb goat cheese, crumbles
- - italian parsley, chopped for garnish
How To Make greek chicken & pork brat kabobs

Step 1Soak 6-8 bamboo skewers in water for 30 minutes. Toss all the veggies in a bowl with olive oil, Greek seasoning, lemon juice, zest and pepper. Assemble skewers: eggplant, tomatoes, sausage, onion & olives. Repeat until skewer is complete Grill on a medium high heat for 15 minutes or until juices run clear, so turning at least once. Remove from grill and drizzle aged balsamic and top with goat cheese and parsley
