2Discard marinade. Assemble chicken breast in casserole dish. Cover with sliced bell pepper, drizzle a bit of olive oil if you like, then cover. Bake chicken breast in a preheated 375 degree oven for 25 minutes or until juices run clear.
3Dice chicken. In a heated skillet, toss in the peppers, chicken, tomatoes and vinaigrette to suit your taste.
