granma's king ranch chicken

This is my Granma's recipe, and probably one of my favorites out of all of hers. I prefer it better than those who layer everything. It's always been a huge hit at my house with everyone I've cooked it for. *You may use onion powder instead of onion, if you choose to.

Ingredients

  • 1 - whole chicken, deboned
  • 1 package tortilla chips
  • 3/4 cup fried onion
  • 1 can rotel with chilies
  • 1 can corn, drained
  • 1 can cream of chicken
  • 1 can cream of mushroom
  • 1 cup milk
  • 1 tablespoon chili powder
  • 1 tablespoon cumin
  • 1 pound grated cheese
  • - salt and pepper

How To Make granma's king ranch chicken

  • Step 1
    Boil chicken until done. (Alternatively, if you choose to use packaged chicken breast/thighs, I cut them up and add a few spices and fry them in a skillet!). Once boiled, debone and set chicken aside.
  • Step 2
    Fry onions, and drain oil and grease. Add chicken to the pan with onions and fry for a minutes. Add the rest of the ingredients except cheese. Stir and blend well.
  • Step 3
    Add 3/4th of your cheese and mix into the rest of the mixture. It should be very thick at this point.
  • Step 4
    Crush tortilla chips and line a 9x13 pan with them. Pour mixture over the chips and top with more crushed tortilla chips. Top with cheese.
  • Step 5
    Bake at 350 for 40 minutes.
