Growing up I always loved going to Grandma & Grandpa Small's on cold day.. Walking in you always felt at home and the smell of red rice soup cooking was always amazing.. anytime I make this, I am transported back in time & smile at the memories I have thanks 2 a simple yet delicious soup

Ingredients

  • 1 cup rice
  • 1 small whole chicken
  • 1 can tomato sauce
  • 2-3 sticks carrots, chopped
  • 2-3 sticks celery, chopped
  • 1 can chicken stock
  • - salt & pepper to taste

How To Make grandma small's red rice soup

  • Step 1
    In large pot, fill 2/3 with water & add chicken. Bring to a boil, lower heat to simmer. When meat is done, remove to cool.
  • Step 2
    in the same pot, add rice, vegetables, tomato sauce & chicken stock, bring to a boil, then cover & simmer until rice is done (will be soupy)
  • Step 3
    Skin & clean chicken, shred & add back into soup (add water if needed)
  • Step 4
    additional options: ~saute carrots, onions, garlic, & celery prior to boiling chicken, remove once sauteed to cool then add water & chicken.. add vegetables back to broth once chicken is removed ~add 1 can diced tomatoes
