Ingredients
- 1 large boneless, skinless chicken breast (raw)
- - kosher salt
- - ground black pepper
- - cayenne pepper
- - granulated garlic (powder)
- 1 medium green pepper, seeded and finely diced
- 1 small onion, finely diced
- 2 small jalapenos, fresh-seeded and finely diced
- 1/4 cup fresh cilantro, finely chopped
- 1/4 teaspoon chipotle chili powder (or to taste)
- 6 tablespoons miracle whip light
How To Make gnee's southwestern chicken salad

Step 1Pre-heat oven to 350 degrees F. Liberally season chicken breast with salt, pepper, garlic powder and cayenne pepper to taste. Wrap chicken breast in foil and bake for 30-40 minutes. Let chicken rest for 20 minutes before shredding or finely dicing.

Step 2Add all diced peppers, onions and chopped cilantro to cooled, shredded or finely diced chicken. Mix together Miracle Whip Light and chipotle chile powder together and add to chicken/veggies and mix thoroughly.

Step 3Serve on toasted bread, bagels, crackers or all by itself!
