Ginger-chicken stir-fry

Ingredients

1-1/4 csliced zucchini
-
1/2 csliced carrots
-
1/2 csliced onion
-
1 smallred bell pepper, cut into strips
-
2-1/2 cshredded green cabbage
-
1 Tbsppeanut oil
-
12 ozboneless, skinless chicken breasts, cut into 1" pieces.
-
1/2 cbottled stir-fry sauce
-
1/2 tspground ginger
-
3 chot cooked rice
-
3/4 cchopped peanuts
How to Make Ginger-chicken stir-fry
- In lg skillet or wok, cook, and stir-fry zucchini, carrots, onion and cabbage in oil over med-high heat for 2 mins.
- remove veggies from pan. repeat w/ remaining veggies. Remove veggies from pan. Add chicken to pan. Cook, stirring, for 5 mins. Add stir-fry sauce and ginger. Cook, stirring until bubbly. Return veggies to pan.
- Cook, stirring for 1 min. Serve veggies and chicken over rice. Sprinkle w/ chopped peanuts.
