ginger-chicken stir-fry

A very healthy dish that I make at least once a month, it's that good!

Ingredients

  • 1-1/4 cup sliced zucchini
  • 1/2 cup sliced carrots
  • 1/2 cup sliced onion
  • 1 small red bell pepper, cut into strips
  • 2-1/2 cup shredded green cabbage
  • 1 tablespoon peanut oil
  • 12 ounces boneless, skinless chicken breasts, cut into 1" pieces.
  • 1/2 cup bottled stir-fry sauce
  • 1/2 teaspoon ground ginger
  • 3 cups hot cooked rice
  • 3/4 cup chopped peanuts

How To Make ginger-chicken stir-fry

  • Step 1
    In lg skillet or wok, cook, and stir-fry zucchini, carrots, onion and cabbage in oil over med-high heat for 2 mins.
  • Step 2
    remove veggies from pan. repeat w/ remaining veggies. Remove veggies from pan. Add chicken to pan. Cook, stirring, for 5 mins. Add stir-fry sauce and ginger. Cook, stirring until bubbly. Return veggies to pan.
  • Step 3
    Cook, stirring for 1 min. Serve veggies and chicken over rice. Sprinkle w/ chopped peanuts.
