Ingredients
- 1-1/4 cup sliced zucchini
- 1/2 cup sliced carrots
- 1/2 cup sliced onion
- 1 small red bell pepper, cut into strips
- 2-1/2 cup shredded green cabbage
- 1 tablespoon peanut oil
- 12 ounces boneless, skinless chicken breasts, cut into 1" pieces.
- 1/2 cup bottled stir-fry sauce
- 1/2 teaspoon ground ginger
- 3 cups hot cooked rice
- 3/4 cup chopped peanuts
How To Make ginger-chicken stir-fry

Step 1In lg skillet or wok, cook, and stir-fry zucchini, carrots, onion and cabbage in oil over med-high heat for 2 mins.

Step 2remove veggies from pan. repeat w/ remaining veggies. Remove veggies from pan. Add chicken to pan. Cook, stirring, for 5 mins. Add stir-fry sauce and ginger. Cook, stirring until bubbly. Return veggies to pan.

Step 3Cook, stirring for 1 min. Serve veggies and chicken over rice. Sprinkle w/ chopped peanuts.
