A very healthy dish that I make at least once a month, it's that good!

1-1/4 c
sliced zucchini
1/2 c
sliced carrots
1/2 c
sliced onion
1 small
red bell pepper, cut into strips
2-1/2 c
shredded green cabbage
1 Tbsp
peanut oil
12 oz
boneless, skinless chicken breasts, cut into 1" pieces.
1/2 c
bottled stir-fry sauce
1/2 tsp
ground ginger
3 c
hot cooked rice
3/4 c
chopped peanuts

How to Make Ginger-chicken stir-fry


  • 1In lg skillet or wok, cook, and stir-fry zucchini, carrots, onion and cabbage in oil over med-high heat for 2 mins.
  • 2remove veggies from pan. repeat w/ remaining veggies. Remove veggies from pan. Add chicken to pan. Cook, stirring, for 5 mins. Add stir-fry sauce and ginger. Cook, stirring until bubbly. Return veggies to pan.
  • 3Cook, stirring for 1 min. Serve veggies and chicken over rice. Sprinkle w/ chopped peanuts.
