I spotted this recipe in a little grocery-store cookbook for slow cookers. Since I love Asian dishes with chicken and almonds I decided to give this one a try. I added a couple of ingredients to make it even better.

  • 2 Tbsp
    peanut oil
  • 4
    boneless skinless chicken breast halves, cut into strips
  • 1 large
    onion, sliced
  • 2 Tbsp
    finely chopped fresh ginger
  • 1/4 c
    teriyaki sauce
  • 1/4 c
    orange juice
  • 1 pkg
    (10-12 oz.) frozen stir-fry vegetables
  • 1/3 c
    sliced almonds
  • 1/2 bunch
    scallions, slivered
  • 1 tsp
    grated orange zest

How to Make GINGER ALMOND CHICKEN

Step-by-Step

  1. Coat your slow cooker with cooking spray. In a large skillet, heat the peanut oil over medium-high heat. Saute chicken until browned, about 5 minutes. Transfer to slow cooker.
  2. Stir together onion, ginger, teriyaki sauce, and orange juice in a small bowl. Coat chicken with mixture. Cover and cook on LOW setting for 2 hours, or until chicken is cooked through.
  3. Turn heat setting to HIGH and add vegetables. Cover. Cook 20 to 30 minutes longer, stirring once, until vegetables are crisp-tender.
  4. Stir in almonds, scallions, and orange zest. Serve over rice.
