ginger almond chicken
I spotted this recipe in a little grocery-store cookbook for slow cookers. Since I love Asian dishes with chicken and almonds I decided to give this one a try. I added a couple of ingredients to make it even better. Photo: Prevention.com

Ingredients
- 2 tablespoons peanut oil
- 4 - boneless skinless chicken breast halves, cut into strips
- 1 large onion, sliced
- 2 tablespoons finely chopped fresh ginger
- 1/4 cup teriyaki sauce
- 1/4 cup orange juice
- 1 package (10-12 oz.) frozen stir-fry vegetables
- 1/3 cup sliced almonds
- 1/2 bunch scallions, slivered
- 1 teaspoon grated orange zest
How To Make ginger almond chicken

Step 1Coat your slow cooker with cooking spray. In a large skillet, heat the peanut oil over medium-high heat. Saute chicken until browned, about 5 minutes. Transfer to slow cooker.

Step 2Stir together onion, ginger, teriyaki sauce, and orange juice in a small bowl. Coat chicken with mixture. Cover and cook on LOW setting for 2 hours, or until chicken is cooked through.

Step 3Turn heat setting to HIGH and add vegetables. Cover. Cook 20 to 30 minutes longer, stirring once, until vegetables are crisp-tender.

Step 4Stir in almonds, scallions, and orange zest. Serve over rice.
