ginger almond chicken

I spotted this recipe in a little grocery-store cookbook for slow cookers. Since I love Asian dishes with chicken and almonds I decided to give this one a try. I added a couple of ingredients to make it even better. Photo: Prevention.com

Ingredients

  • 2 tablespoons peanut oil
  • 4 - boneless skinless chicken breast halves, cut into strips
  • 1 large onion, sliced
  • 2 tablespoons finely chopped fresh ginger
  • 1/4 cup teriyaki sauce
  • 1/4 cup orange juice
  • 1 package (10-12 oz.) frozen stir-fry vegetables
  • 1/3 cup sliced almonds
  • 1/2 bunch scallions, slivered
  • 1 teaspoon grated orange zest

How To Make ginger almond chicken

  • Step 1
    Coat your slow cooker with cooking spray. In a large skillet, heat the peanut oil over medium-high heat. Saute chicken until browned, about 5 minutes. Transfer to slow cooker.
  • Step 2
    Stir together onion, ginger, teriyaki sauce, and orange juice in a small bowl. Coat chicken with mixture. Cover and cook on LOW setting for 2 hours, or until chicken is cooked through.
  • Step 3
    Turn heat setting to HIGH and add vegetables. Cover. Cook 20 to 30 minutes longer, stirring once, until vegetables are crisp-tender.
  • Step 4
    Stir in almonds, scallions, and orange zest. Serve over rice.
