How to Make Frito Chili Pie - Lite

  • 1For the veggies and garlic I like mine chopped finely. I used my hand held chopper for that but you can use a food processor (just pulse so the mixture doesn't become mush)
  • 2In a pan heat 1 tbs of olive oil and brown the chicken. Add the salt and pepper. Once cooked through add the fresh veggies/garlic and cook for another 5 minutes on med. heat. You want to soften the veggies a little.
  • 3Add your meat/veggie mixture to a stock pot. Turn on heat to med.-high. Add the rest of the ingredients. Up to spices. Stir well to combine. Bring up to a boil then reduce to simmer. Cover and cook for 2 hours. Stir every thirty minutes.
  • 4Spoon into bowls and top with a handful of fritos and cheese. Optional - can top with sourcream, chopped pickled jalapeno, chopped onion, and cilantro. Enjoy
