frito chili pie - lite

My kids love this chili! Plus its great for them and my waistline :)

Ingredients

  • 1 teaspoon salt and pepper
  • 1 1/2 pounds ground chicken breast (your butcher can do this)
  • 3/4 cup celery chopped fine
  • 1/2 cup onion chopped fine
  • 1/2 cup carrot chopped fine
  • 1/2 - bell pepper chopped fine
  • 3 cloves garlic chopped fine
  • 1 small sweet potato peeled and chopped fine
  • 1 can tomatoes and chiles
  • 1 can tomato sauce
  • 1 can chopped green chili
  • 2 cans chili beans mild sauce
  • 2 cans pinto beans drained
  • 6 ounces beer
  • 1 tablespoon ground cumin
  • 1 tablespoon chili spice blend. your favorite
  • 1 - bag of low sodium fritos
  • 1 - bag of lowfat shredded cheddar
  • - optional for toppings - sour cream, chopped pickled jalapeno, chopped onion

How To Make frito chili pie - lite

  • Step 1
    For the veggies and garlic I like mine chopped finely. I used my hand held chopper for that but you can use a food processor (just pulse so the mixture doesn't become mush)
  • Step 2
    In a pan heat 1 tbs of olive oil and brown the chicken. Add the salt and pepper. Once cooked through add the fresh veggies/garlic and cook for another 5 minutes on med. heat. You want to soften the veggies a little.
  • Step 3
    Add your meat/veggie mixture to a stock pot. Turn on heat to med.-high. Add the rest of the ingredients. Up to spices. Stir well to combine. Bring up to a boil then reduce to simmer. Cover and cook for 2 hours. Stir every thirty minutes.
  • Step 4
    Spoon into bowls and top with a handful of fritos and cheese. Optional - can top with sourcream, chopped pickled jalapeno, chopped onion, and cilantro. Enjoy
