Ingredients
- 1 teaspoon salt and pepper
- 1 1/2 pounds ground chicken breast (your butcher can do this)
- 3/4 cup celery chopped fine
- 1/2 cup onion chopped fine
- 1/2 cup carrot chopped fine
- 1/2 - bell pepper chopped fine
- 3 cloves garlic chopped fine
- 1 small sweet potato peeled and chopped fine
- 1 can tomatoes and chiles
- 1 can tomato sauce
- 1 can chopped green chili
- 2 cans chili beans mild sauce
- 2 cans pinto beans drained
- 6 ounces beer
- 1 tablespoon ground cumin
- 1 tablespoon chili spice blend. your favorite
- 1 - bag of low sodium fritos
- 1 - bag of lowfat shredded cheddar
- - optional for toppings - sour cream, chopped pickled jalapeno, chopped onion
How To Make frito chili pie - lite

Step 1For the veggies and garlic I like mine chopped finely. I used my hand held chopper for that but you can use a food processor (just pulse so the mixture doesn't become mush)

Step 2In a pan heat 1 tbs of olive oil and brown the chicken. Add the salt and pepper. Once cooked through add the fresh veggies/garlic and cook for another 5 minutes on med. heat. You want to soften the veggies a little.

Step 3Add your meat/veggie mixture to a stock pot. Turn on heat to med.-high. Add the rest of the ingredients. Up to spices. Stir well to combine. Bring up to a boil then reduce to simmer. Cover and cook for 2 hours. Stir every thirty minutes.

Step 4Spoon into bowls and top with a handful of fritos and cheese. Optional - can top with sourcream, chopped pickled jalapeno, chopped onion, and cilantro. Enjoy
