fried chicken - crispy

This is my favorite Fried Chicken. Crispy on the outside, tender juicy on the inside. It's not a heavy coating. It doesn't take long to cook when using thin boneless chicken breasts or cut into tenders. Yum! This was supper at my house. Enjoy!!

Ingredients

  • 4 - (6oz) boneless,skinless chicken breasts - make sure all are about the same thickness; if not pound out so that they all cook roughly the same amount of time.
  • 1/3 cup flour
  • 1/3 cup cornmeal, i use yellow
  • 1 1/2 teaspoons salt
  • 1 teaspoon paprika
  • 3/4 teaspoon onion powder
  • 1/2 teaspoon pepper
  • 1 tablespoon water
  • 1 large egg, beaten
  • CRISCO VEGETABLE OIL FOR FRYING

How To Make fried chicken - crispy

  • Step 1
    Rinse chicken and pat dry with paper towel.
  • Step 2
    Combine corn meal, flour, salt, paprika, onion powder and pepper in a shallow dish; mix well. Combine egg and water in another shallow dish.
  • Step 3
    Dip the chicken in the egg mixture.
  • Step 4
    Now coat with the cornmeal mixture.
  • Step 5
    Pour enough oil to meausre about a 1/4 inch in a heavy skillet, I use a cast iron skillet. You could also use an electric skillet. Heat oil to 365ºF in electric skillet or on medium heat in large heavy skillet.
  • Step 6
    Now fry the chicken 5 to 8 minutes on each side, until well-browned and internal temperature reaches 165ºF. Drain on paper towels and serve, or if not finished cooking all of the chicken; place the cooked chicken on a bakers rack, and place inside a 200 degree oven to keep warm. Enjoy!!
