festive hawaiian chicken

I had planned to do chicken kabobs but it was raining out and I could not use the grill. I came up with this easy way to bake instead of grill. It turned out great!!

Ingredients

  • 1 pound chicken breast strips
  • 1/2 medium green pepper
  • 1/2 medium red pepper
  • 1/2 medium sweet onion
  • 10 small fresh cherry tomatoes
  • 1/2 cup barbecue sauce
  • 2 tablespoons white vinegar
  • 1/2 cup juice from canned pineapple
  • 1/2 cup canned pineapple chunks

How To Make festive hawaiian chicken

  • Step 1
    Spray medium baking dish with cooking spray. Place chicken strips on top.
  • Step 2
    Slice peppers and onion in medium strips and scatter on top of chicken. Add whole small tomatoes and pineapple chunks
  • Step 3
    Stir white vinegar into barbecue sauce. Add pineapple juice and mix well. Pour sauce mixture over all ingredients in dish. Cover and chill for at least 3 hours.
  • Step 4
    Cover and bake about 1/2 half hour or until vegetables are tender.
