Feliciano Adobo Seasoning
Rub the seasoning well into all the pieces of chicken, or both inside and out of a whole chicken, before roasting. It's also good for seasoning a pork roast.
Abuelita, my mother-in-law, uses this seasoning when making her recipe, Abuelita's Empanadillas.
FOR EACH 2 1/2 POUNDS OF CHICKEN:
3whole black peppercorns
2 clovegarlic, peeled
1 1/4 tspwhole dried oregano
2 1/2 tspsalt
1 1/2 tspolive oil
1/2 tspvinegar or lime juice
How to Make Feliciano Adobo Seasoning
- Crush peppercorns, garlic cloves, oregano and salt in a mortar and pestle. Mix in the olive oil and vinegar or lime juice until all is well combined. Rub chicken with the seasoning before cooking.
- Chicken can be roasted, grilled, or pan-fried with this seasoning. For a lovely Arroz con Pollo dish, cook chicken pieces seasoned with adobo in olive oil in a large skillet. Then follow with Abuelita's Spanish Rice, made in the same pan.
