This seasoning gives a characteristic and distinctive Caribbean flavor to chicken.
Rub the seasoning well into all the pieces of chicken, or both inside and out of a whole chicken, before roasting. It's also good for seasoning a pork roast.
Abuelita, my mother-in-law, uses this seasoning when making her recipe, Abuelita's Empanadillas.

  • 3
    whole black peppercorns
  • 2 clove
    garlic, peeled
  • 1 1/4 tsp
    whole dried oregano
  • 2 1/2 tsp
  • 1 1/2 tsp
    olive oil
  • 1/2 tsp
    vinegar or lime juice

How to Make Feliciano Adobo Seasoning


  1. Crush peppercorns, garlic cloves, oregano and salt in a mortar and pestle. Mix in the olive oil and vinegar or lime juice until all is well combined. Rub chicken with the seasoning before cooking.
  2. Chicken can be roasted, grilled, or pan-fried with this seasoning. For a lovely Arroz con Pollo dish, cook chicken pieces seasoned with adobo in olive oil in a large skillet. Then follow with Abuelita's Spanish Rice, made in the same pan.
