farmer's market salad

Use the best ingredients you can find at the farmer's markets, and your favorite rotisserie chicken, or leftover chicken. This salad is excellent on a hot day when you don't want to heat up the kitchen. I lightly steam all the cooked veg in the microwave. Great served with a loaf of excellent crusty bread and a pitcher of sangria!

Ingredients
- 1 large romaine lettuce head, trimmed and washed
- 1 large red leaf lettuce head, trimmed and washed
- 1 cup cooked fresh corn, cut off the cob
- 4 medium red or fingerling potatoes, cooked, cubed
- 2 cups cooked green beans, trimmed and cut
- 1 1/2 cups fresh heirloom cherry tomatoes, halved
- 1 cup sliced fresh cucumbers
- 1 cup sliced fresh red bell pepper
- 2 cups cooked rotisserie chicken, cubed
- 3/4 cup feta cheese, crumbled
How To Make farmer's market salad

Step 1Layer all ingredients, beginning with lettuce, in serving bowl. Top with croutons, preferably homemade, and serve dressing on the side. For dressing, combine 1 clove garlic, 1/4 white wine vinegar, 2 TB honey, 1/2 cup olive oil, in blender and emulsify. Add fresh chopped basil, parsley, salt, and pepper to taste.
