This recipe can change with whatever you have on hand in your fridge, always different, always tasty! Can be served hot or cold, eaten at the table or on the trail! It's my favorite way of getting rid of lots of eggs if the chickens have been busy.

Ingredients

  • 8 - eggs
  • 1 tablespoon chopped fresh ginger root
  • 1/2 - chopped onion
  • 1/2 cup chopped mushrooms
  • 1/2 cup chopped cauliflower
  • 1/2 cup chopped broccoli
  • 1/2 cup chopped shrimp
  • 1/2 cup mock crabmeat
  • 2 tablespoons oyster sauce
  • 6 slices cooked bacon, chopped, or spam, cubed
  • 1/2 cup chopped, cooked chicken
  • 1/2 teaspoon salt and pepper
  • 2 tablespoons chopped chives
  • 2 tablespoons flax seed or ground flax
  • 1 teaspoon seasoning, whatever kind you like

How To Make egg patty surprise

  • Step 1
    mix whatever ingredients you like listed, in any order, you can add whatever else you like, all is just a guideline. Mix should be fairly sloppy once the beaten eggs are added. You can add more or less to adjust.
  • Step 2
    dribble some oil (I like to use Olive oil) in a heated pan, add a large scoop of mixture and spread around some. You can use a griddle to make several at once. Flip after it sets firm. I like to add grated CoJack cheese to the top after they are done on both sides. A dab of Sour Cream adds to this well also! Serve or chill and save for later.
  • Step 3
    You can make these the size of your pan, or a taco shell and wrap them in one for a breakfast/lunch sandwich too. Roll one up in a large shell, with a layer of sour cream between, slice into about 10 slices and serve as appetizers. Very versatile recipe!
