My dads recipe for spicy chicken chili. Goes great w/ corn bread, which he would make w/ chopped red bell peppers in the homemade mix.

  • 1 - 16 oz can refried beans
  • 1 - 16 oz can baked beans
  • 1 - 16 oz jar chunky, spicy salsa
  • 1/4 cup ketchup
  • 4 - boneless, skinless chicken breasts, cut into 1"-cubes
  • 1/2 cup reduced-fat, shredded monterey jack cheese.

  • Step 1
    Heat oven to 350. In a 2-1/2-quart casserole dish, combine refried beans, baked beans, salsa, ketchup, and chicken cubes..

    Cover and bake 1 hr, stirring occasionally.
