Made w/ delicate puff pastry and veggies in a thickened broth. 1 skillet, so easy!!

Ingredients

  • 1 small onion, diced
  • 2 - stalks celery, diced
  • 2 teaspoons minced garlic
  • 1/2 cup frozen sliced carotts, thawed
  • 1/2 pound green beans, sliced into 1-1/2" pieces
  • 1/2 pound small red potatoes, cut into 1/2" cubes
  • 2-1/2 cup organic chicken broth
  • 1/4 cup flour
  • 2 cups cooked, shredded chicken
  • 1 - sheet puff pastry, thawed
  • 1 - egg

How To Make easy skillet chicken pot pie

  • Step 1
    Heat oven to 400. Heat oil in lg oven-safe skillet over medium heat. Add onion, celery and garlic. Cook until softened. Stir in carrots, green beans and potatoes. Add chicken broth. Bring to a simmer. Cook 10 mins.
  • Step 2
    Season w/ salt and pepper. Sprinkle flour over veggies. Stir and add chicken. Bring to a simmer. Meanwhile unfold puff pastry on a floured surface. Roll out to fit skillet.
  • Step 3
    In small bowl, whisk together the egg and 1 tbsp water. Remove skillet from heat. Place pastry over skillet, tuck in edges. Brush pastry w/ egg wash. Bake in oven 15 mins or until pastry is golden.
