easy pot pie

My family thoroughly enjoyed this for dinner. I love the fact that the crust in made with whole wheat flour and that there are no canned soups in the filling. I got this recipe from Graham Family Ministries website.

Ingredients

  • FILLING
  • 2 tablespoons dry minced onion
  • 1/4 teaspoon garlic powder
  • 1/2 cup whole wheat flour ( i use freshly ground)
  • 2 cups chicken broth
  • 2 cups milk
  • 2-3 cups cooked, chopped chicken
  • 1 pound frozen mixed vegetables(peas, carrots & corn)
  • 1/2 teaspoon salt
  • 1/4 teaspoon pepper
  • CRUST
  • 1 1/2 cups whole wheat flour ( i used freshly ground)
  • 2 1/4 teaspoons baking powder
  • 3/4 teaspoon salt
  • 1 1/2 cups milk
  • 1/2 cup butter melted

How To Make easy pot pie

  • Step 1
    Saute the flour, onion & garlic powder in some olive oil or butter for a few minutes.
  • Step 2
    Gradually stir in the milk & broth using a whisk to break up lumps.
  • Step 3
    Stir until the mixture boils allowing mixture to boil for 1 minutes.
  • Step 4
    Stir in the chicken, vegetables, salt & pepper.
  • Step 5
    Pour this mixture into greased 13x9 baking dish or into 2 round, glass pie plates.
  • Step 6
    In a blender combine the crust ingredients.
  • Step 7
    Pour over filling making sure to cover it completely.
  • Step 8
    Bake it at 350' for about 45 minutes or until golden.
