I love love love fried chicken...but it does not love me back. I heard about panko crumbs, here there and every where...and when I ran across them at the store, I thought why not? The panko crumbs are subtle, and let the chicken flavor shine through!

Ingredients
- 4 large boneless skinless chicken breasts
- 2 cups panko crumbs
- 1 teaspoon coarse kosher salt
- 1 teaspoon ground black pepper
How To Make easy oven fried chicken

Step 1Preheat oven to 400* with rack in the middle shelf.

Step 2Cut each chicken breast in half, and trim the extra fat off.

Step 3Mix toghether panko crumbs, salt and pepper on a plate.

Step 4Roll each chicken piece in panko crumbs, until all sides are coated.

Step 5Place on a cookie sheet and bake for 30 minutes.
