I love love love fried chicken...but it does not love me back. I heard about panko crumbs, here there and every where...and when I ran across them at the store, I thought why not? The panko crumbs are subtle, and let the chicken flavor shine through!

Ingredients

  • 4 large boneless skinless chicken breasts
  • 2 cups panko crumbs
  • 1 teaspoon coarse kosher salt
  • 1 teaspoon ground black pepper

How To Make easy oven fried chicken

  • Step 1
    Preheat oven to 400* with rack in the middle shelf.
  • Step 2
    Cut each chicken breast in half, and trim the extra fat off.
  • Step 3
    Mix toghether panko crumbs, salt and pepper on a plate.
  • Step 4
    Roll each chicken piece in panko crumbs, until all sides are coated.
  • Step 5
    Place on a cookie sheet and bake for 30 minutes.
