My son-in-law made this for everyone one night, and I loved it. Finally teased the recipe from him, lol.

    12.5 oz can swanson white chunk chicken breasts
  • 1-1/2 c
    favorite salsa, i used hot
  • 1-1/2 c
    frozen kernel corn, thawed
  • 3 c
    low-sodium chicken broth
  • 2 c
    crushed, baked tortilla chips
  • 1/3 c
    reduced-fat, shredded mexican-style cheese

How to Make Easy Mexican chicken soup


  1. Stir chicken, salsa, corn and broth in lg saucepan. Heat to boiling, over medium heat, stirring occasionally.
  2. Reduce heat to low. Cook, stirring for 5 mins. Place 1/3 cups tortilla chips in bottom of serving bowls. Ladle soup over chips. Sprinkle 1 tbsp cheese into each bowl.
