My son-in-law made this for everyone one night, and I loved it. Finally teased the recipe from him, lol.

Ingredients

  • 1 - 12.5 oz can swanson white chunk chicken breasts
  • 1-1/2 cup favorite salsa, i used hot
  • 1-1/2 cup frozen kernel corn, thawed
  • 3 cups low-sodium chicken broth
  • 2 cups crushed, baked tortilla chips
  • 1/3 cup reduced-fat, shredded mexican-style cheese

How To Make easy mexican chicken soup

  • Step 1
    Stir chicken, salsa, corn and broth in lg saucepan. Heat to boiling, over medium heat, stirring occasionally.
  • Step 2
    Reduce heat to low. Cook, stirring for 5 mins. Place 1/3 cups tortilla chips in bottom of serving bowls. Ladle soup over chips. Sprinkle 1 tbsp cheese into each bowl.
