Ingredients

  • 2 large boneless chicken breast, 1" cubes
  • 2 tablespoons olive oil, u may need a bit more
  • 2 1/2 cups broccoli florets
  • 1 1/2 cups carrots, slicd thin
  • 5 cloves garlic, gratd
  • 1/2 cup chicken broth
  • 1/2 cup soy sauce
  • 1 teaspoon sesame oil.
  • 1/4 teaspoon chili sesame oil, optional
  • 1 tablespoon chopd scallion
  • - salt n pepper
  • 1 tablespoon cornstarch (mix with 1 tblspn of watr)

  • Step 1
    IN A LARGE HOT PAN (or wok) HEAT OLIVE OIL. SEASON CHICKEN WITH ONE TSP OF SALT N 1/2 TSP BLK PEPPER. IN TWO BATCHES BROWN CHICKEN 3 MIN. EACH SIDE....REMOVE TO PLATE N CONTINUE WITH SECOND BATCH :)
  • Step 2
    IN SAME HOT PAN ( U MAY NEED TO ADD ANOTHER TBLSPN OF OLIVE OIL) ADD BROCCOLI N CARROTS COOK FOR 3 MIN OR UNTIL CARROTS R TENDER...ADD GARLIC N SAUTÉ FOR 30 SECONDS. ADD CHICKEN BAK INTO PAN.
  • Step 3
    ADD CHICKEN BROTH, HONEY, SOY SAUCE N SESAME OIL THEN ADD CORNSTARCH SLURRY N STIR....COOK ON A SLOW SIMMER FOR 5 MINUTES.
  • Step 4
    SERVE ON RICE SCATTER SCALLIONS N THEN ENJOY :)
