Ingredients
- 2 boneless, skinless chicken breasts cut into strips
- 2 tablespoons extra virgin olive oil
- 1 package saltine crackers, crushed
- 2 eggs, beaten
How To Make easy crunchy chicken fingers

Step 1Beat the eggs in a small bowl and set aside. Place the crushed crackers into another bowl

Step 2Heat the oil in a large heavy skillet over medium heat.

Step 3Carefully dip each chicken strip into the eggs and then into the crushed cracker crumbs. Be sure to coat well on both sides.

Step 4Place the coated chicken strips into the hot oil.

Step 5Turn chicken occasionally to insure browning on both sides. Cook about 20-30 minutes or until fork-tender.

Step 6Drain on paper towels and serve.
