easy chicken and broccoli casserole (lower carb)

I'm always looking for good recipes for my husband's diabetes. I got this one from a friend and it is delicious! It has about 409 calories and 13 net carbs per serving. It's a great, one-pan meal that the whole family will enjoy! Just serve with salad or your favorite veggie and if you're not watching carbs, you can add rolls. I hope y'all enjoy!

Ingredients

  • 3 - boneless, skinless chicken breasts, cooked and shredded
  • 16 ounces bag frozen broccoli, thawed and chopped
  • 8 ounces container cream cheese/greek yogurt mix (if you're not watching carbs, you can omit this and add two cans of soup)
  • 1 can cream of chicken soup, undiluted
  • 1 cup colby/monterey jack cheese, shredded
  • 1 cup cheddar cheese, shredded
  • 1 cup mayonnaise
  • - salt and peeper to taste

How To Make easy chicken and broccoli casserole (lower carb)

  • Step 1
    Preheat oven to 375 degrees. Coat a 9 X 13 casserole dish with cooking spray.
  • Step 2
    Combine all ingredients and spread into prepared casserole dish. Bake for about 30 minutes or until bubbly. Serve hot.
