I love using crushed cornflakes on chicken, the cornflakes give it a healthy crunch.

Ingredients

  • 1 cup light sour cream
  • 2 tablespoons dijon mustard
  • 2 teaspoons minced garlic
  • 1/2 teaspoon pepper
  • 4 - boneless, skinless chicken breasts
  • 1 cup crushed corflakes
  • 1 - 1 0z pkg dry onion soup mix
  • 3 tablespoons melted butter

How To Make easy baked chicken breasts

  • Step 1
    Heat oven to 400. Spray a lg baking dish w/ cooking spray. In shallow bowl whisk together, sour cream, mustard, garlic and pepper. Add chicken to bowl and turn to coat evenly.
  • Step 2
    Refrigerate chicken for 30 mins. In another shallow bowl, mix crushed cornflakes and onion soup mix. Gently press chicken into cornflake mix and place chicken in baking dish. Drizzle chicken w/ butter.
  • Step 3
    Bake 20-25 mins, or until juices run clear.
