Ingredients

  • 1/4 cup finely chopped cilantro
  • 1 pound fresh ground chicken
  • 2 tablespoons island teriyaki sauce
  • 1 teaspoon sriracha hot sauce
  • 2 tablespoons minced papaya
  • 2 tablespoons minced maui sweet onion
  • 2 cloves garlic, finely minced
  • 1/2 teaspoon roasted ground ginger (prefer mccormick gourmet collection)
  • 1/2 teaspoon ground curry powder
  • 1/2 teaspoon ground jamaican allspice (prefer mccormick)
  • 1 teaspoon coarse sea salt
  • 0 - ginger lime mango mayo:
  • 1/2 cup mayonnaise with olive oil
  • 1 teaspoon roasted ground ginger (prefer mccormick gourmet collection)
  • 1/2 cup dice ripe mango
  • 1 tablespoon fresh lime juice
  • 1 teaspoon lime zest
  • 0 - other ingredients:
  • 2 tablespoons vegetable oil, for brushing on grill
  • 1/3 cup island teriyaki sauce, (prefer kona coast brand)
  • 36 - round butter crackers
  • 1 - bag (5 oz) mixed baby salad greens
  • 1/2 cup finely chopped red onion

How To Make down island maui wowee chicken bites

  • Step 1
    In a large bowl combine the first eleven ingredients. Form into 36 patties, about 1/2 “ thick and 1 3/4” in diameter. (think the size of your butter cracker) Place on a parchment lined baking sheet. Refrigerate, covered until ready to cook.
  • Step 2
    To make the Ginger Lime Mango Mayo combine all mayo ingredients in a food processor and pulse until mayo mixture is smooth. Cover and refrigerate until ready to use.
  • Step 3
    Preheat a gas grill on medium-high heat. Brush vegetable oil on grill to create a non-stick surface. Place small patties on grill and cook until chicken is fully cooked, turning once, about 3-4 minutes each side. During the last few minutes of grilling, baste the patties with 1/3 cup of the Island Teriyaki Sauce.
  • Step 4
    Place 1/2 teaspoon of the Ginger Lime Mango Mayo on each Butter cracker, equal amounts of baby salad greens, top with chicken patty, and small amounts of diced red onion.
