I buy fresh veggies from a farm 20 minutes from home and at certain crop seasons, I purchase fresh asparagus. This recipe is so healthy and yum!

Ingredients

  • 1/2 pound fresh market asparagus, washed and chopped in 1/2" pieces
  • 6 ounces chicken breast filet, sliced
  • 2 tablespoons greek olive oil
  • 1 tablespoon minced garlic
  • 1 tablespoon coarse sea salt
  • 2 dashes black pepper
  • 1/2 teaspoon basil, dried
  • 1/4 cup kalamata (greek) olives
  • 1/4 package chinese rice noodles
  • 1-2 tablespoon parmesan cheese

How To Make diana's asparagus spaghetti

  • Step 1
    Sauté Asparagus in pan with 1T olive oil only until crisp, about 5 minutes. Add spices.
  • Step 2
    Add chicken and 1T olive oil to pan and sauté 10-15 minutes on medium heat until tender and slightly browned.
  • Step 3
    While chicken is sautéing, Cook rice noodles in mircowave for 6-9 minutes according to pkg. Drain.
  • Step 4
    Add olives and heat on low, before the chicken is done.
  • Step 5
    Place sauce on top of the bed of noodles on dinner plate and sprinkle with Parmesan cheese. Serve immediately.
