dee's curried chicken with apple
My ex loved curry, so I played with this recipe until it suited our tastes. This has a wonderful curry flavor and is so good. I don't like recipes that say they are curry, and you can hardly taste the curry in it. I hope you enjoy this recipe as much as I do.

Ingredients
- 3 tablespoons olive oil, light
- 1/4 cup butter
- 1 large onion, chopped
- 4 medium apples, peeled, cored and chopped
- 1/4 cup all-purpose flour
- 2 - 4 tablespoons mild curry powder, less or more to your taste
- 1 - 2 tablespoons red curry paste, less or more to your taste
- 2 - 4 tablespoons brown sugar, less if apples are sweet, more if you like your curry sweeter
- 1/2 teaspoon salt
- 1/2 teaspoon white pepper
- 1/2 teaspoon onion powder
- 1/2 teaspoon garlic powder
- 3 cups chicken broth
- 1 1/2 cups coconut milk or evaporated milk if you wish
- 2 cups apple juice
- 4 cups cooked cubed chicken, boneless breast and thigh meat or just breast meat
- 8 cups cooked rice or couscous, your choice
How To Make dee's curried chicken with apple

Step 1Prepare and chop chicken, onions, and apples. Set aside. Make rice or couscous while cooking curry.

Step 2In a large deep skillet, melt butter and olive oil. Add onion and saute for a few minutes. Add apple and saute a few more minutes until soft.

Step 3Sprinkle flour over the mixture and cook for 2 minutes to cook out the flour taste.

Step 4Add the curry powder, curry paste, and spices. Stir in chicken broth, coconut milk, and apple juice. Stir and cook over medium heat until thick and bubbling, adding more liquid if needed.

Step 5Stir in chicken and cook another 10 minutes. Add more curry to suit your taste. Serve over rice or couscous. Enjoy!

Step 6Note about the curry: Start with a lesser amount and add more at the end before the chicken if you desire a stronger curry taste, as I do.
