This marinade differs from most because it requires sauteeing veggies first! Now all of your food will taste delicious and its preparation time will be cut in half! Add this perfect blend of vegetables, herbs and spices to your soups, meats, beans, vegetables, gumbos, stews, eggs, casseroles, Use as a BBQ Marinade the options are endless!Omit the Adobo for a more natural blend! MOST IMPORTANTLY FOR THOSE OF YOU WITH PICKY EATERS AT HOME, NOW YOU WILL NOT HAVE TO DEAL WITH THEM SEEING ONIONS, OR PEPPERS IN THEIR FOOD AND NOT WANTING TO EAT! Enjoy and please share!

Ingredients

  • - 2 ½ cups coarsely diced red onions
  • - 1 coarsely diced red pepper (seeded)
  • - 1 coarsely diced yellow bell pepper (seeded)
  • - 1 coarsely diced green bell pepper (seeded)
  • - 1 tbsp fresh dried chives
  • - pinch of pepper
  • - 1 entre head of garlic peeled and smashed
  • - ½ cup pitted spanish green olives for salads
  • - the juice of 1 lemon or organic lime
  • - 1tbsp vinegar
  • - 2 tbsp all purpose seasoning (i prefer adobo)
  • - sea salt and fresh pepper to taste (optional)
  • - ¼ cup evoo
  • - 1 tbsp fresh dried organic oregano leaves

How To Make darlene’s sautéed sofrito * all purpose marinade, paste and spread

  • Step 1
    In a large pot heat oil
  • Step 2
    Rinse and dice all vegetables
  • Step 3
    Place in large bowl
  • Step 4
    Add remaining ingredients to vegetables and toss
  • Step 5
    Pour vegetables in pan and stir
  • Step 6
    Reduce to medium heat and cover
  • Step 7
    Let simmer for 3 to 5 minutes
  • Step 8
    Allow vegetables to cool before handling for approximately 5 to 10 minutes

    In food processor, puree all ingredients until consistency level of your choice. I prefer a creamier

    Refrigerate in a glass jar
  • Step 11
    This seasoning may be frozen for up to 6 Months (you may also freeze it in ice trays then place frozen cubes in a freezer bag use cubes for your seasoning! This is delicious and can be used in anything enhance the flavor of all your dishes: meats, fish, salads seafood, vegetables, pastas, barbecues, stir fries, enhance flavor of dressings, , soups, beans, and much more!
