Ingredients
- 2 onions, chopped
- 3 tablespoons coconut oil (or your choice)
- 1 1/2 cups long grain rice
- 1 apple - peeled, cored, and grated
- 3/4 cup golden raisins
- 1 tablespoon brown sugar
- 2 teaspoons curry powder
- 21 ounces chicken broth
- 1 tablespoon lemon juice
- salt to taste
- 3 cups cooked chicken or turkey, cut into bite-sized pieces
- 1/2 cup toasted slivered almonds
How To Make curried chicken with fruit and rice

Step 1In a dutch oven, cook onion in oil until soft and translucent. Add the rice and cook for 3 minutes, stirring constantly.

Step 2Add remaining ingredients (except almonds) and combine well.

Step 3Cover and let the casserole simmer until the rice is cooked tender and the liquid is absorbed. Serve with your favorite condiments such as chutney.
