This is a great way to use leftover chicken or turkey. Feel free to increase the amount of curry powder to your liking.

Ingredients

  • 2 onions, chopped
  • 3 tablespoons coconut oil (or your choice)
  • 1 1/2 cups long grain rice
  • 1 apple - peeled, cored, and grated
  • 3/4 cup golden raisins
  • 1 tablespoon brown sugar
  • 2 teaspoons curry powder
  • 21 ounces chicken broth
  • 1 tablespoon lemon juice
  • salt to taste
  • 3 cups cooked chicken or turkey, cut into bite-sized pieces
  • 1/2 cup toasted slivered almonds

How To Make curried chicken with fruit and rice

  • Step 1
    In a dutch oven, cook onion in oil until soft and translucent. Add the rice and cook for 3 minutes, stirring constantly.
  • Step 2
    Add remaining ingredients (except almonds) and combine well.
  • Step 3
    Cover and let the casserole simmer until the rice is cooked tender and the liquid is absorbed. Serve with your favorite condiments such as chutney.
