Ingredients
- 3 - boneless skinless chicken breast
- 1/4 cup olive oil
- 2 tablespoons homemade curry powder (link in comment below)
- 1 cup water
- 1 can petite diced tomatoes (15 oz size)
- 1/8 cup lime juice
- 1 medium white onion
- 2 cups cooked rice
How To Make curried chicken (sallye)

Step 1Cut chicken breasts into bite sized chunks and set aside Mince onion and set aside

Step 2Heat oil in cast iron or heavy skillet to medium high heat When oil is slightly smoking, add onions and cook until translucent (3-5 minutes) In same pan with onions, add chicken and curry powder. Cook, stirring frequently until all sides are golden brown

Step 3Add all other ingredients except rice and bring to boil When mixture is boiling, turn heat to low and cover pan Simmer for about 20 minutes until chicken is tender and sauce has thickened

Step 4On serving platter, place previously cooked rice and make a well. Pour chicen curry mixture over rice and serve immediately
