Ingredients

3
boneless skinless chicken breast
1/4 c
olive oil
2 Tbsp
homemade curry powder (link in comment below)
1 c
water
1 can(s)
petite diced tomatoes (15 oz size)
1/8 c
lime juice
1 medium
white onion
2 c
cooked rice

How to Make CURRIED CHICKEN (SALLYE)

Step-by-Step

  • 1Cut chicken breasts into bite sized chunks and set aside

    Mince onion and set aside
  • 2Heat oil in cast iron or heavy skillet to medium high heat

    When oil is slightly smoking, add onions and cook until translucent (3-5 minutes)

    In same pan with onions, add chicken and curry powder.

    Cook, stirring frequently until all sides are golden brown
  • 3Add all other ingredients except rice and bring to boil

    When mixture is boiling, turn heat to low and cover pan

    Simmer for about 20 minutes until chicken is tender and sauce has thickened
  • 4On serving platter, place previously cooked rice and make a well.

    Pour chicen curry mixture over rice and serve immediately
