THIS IS SO GOOD REALLY GOOD FOR YOU .I,m trying to eat healthyer.After my cancer i have been looking for healthyer recipes to make for us.

Ingredients

  • 1 small onion
  • 4 - chicken breasts, boneless and skinless halves
  • 2 teaspoons curry powder
  • 1/4 teaspoon garlic salt
  • 1/2 cup orange juice
  • 1 - mandarin oranges 15 oz can drained well
  • 4 - scallions chopped finely
  • 1 cup golden raisins
  • 2 tablespoons sweeten flaked coconut,divded
  • 1/4 cup light mayonnaise
  • 24 - whole wheat crackers

How To Make curried chicken salad

  • Step 1
    set oven for 400.Scatter onion slices on the bottom of medium baking dish .And spinkle with currey and garlic salt.
  • Step 2
    Pour orange juce around chicken bake about 30 min,or until cooked through.Cool,then cut into bite size pieces.
  • Step 3
    In medium bowl mix together chicken,oranges,scallions,raisins , 1 teaspoon curry powder,and 1 tablspoon of coconut.Stir in mayonnaise.Transfer to serving bowl .
  • Step 4
    Top with remaining coconut serve with whole with crackers,serves 8
