Ingredients
- 1 small onion
- 4 - chicken breasts, boneless and skinless halves
- 2 teaspoons curry powder
- 1/4 teaspoon garlic salt
- 1/2 cup orange juice
- 1 - mandarin oranges 15 oz can drained well
- 4 - scallions chopped finely
- 1 cup golden raisins
- 2 tablespoons sweeten flaked coconut,divded
- 1/4 cup light mayonnaise
- 24 - whole wheat crackers
How To Make curried chicken salad

Step 1set oven for 400.Scatter onion slices on the bottom of medium baking dish .And spinkle with currey and garlic salt.

Step 2Pour orange juce around chicken bake about 30 min,or until cooked through.Cool,then cut into bite size pieces.

Step 3In medium bowl mix together chicken,oranges,scallions,raisins , 1 teaspoon curry powder,and 1 tablspoon of coconut.Stir in mayonnaise.Transfer to serving bowl .

Step 4Top with remaining coconut serve with whole with crackers,serves 8
