Ingredients
- 1/2 cup plain, nonfat yogurt
- 1/4 cup light mayonnaise
- 1 - 1 1/2 teaspoons curry powder
- 1/4 teaspoon salt
- 1/8 teaspoon pepper
- 3 cups cooked chicken, chopped
- 1 cup seedless red or green grapes, halved
- 1/2 cup water chestnuts, chopped
- 1/2 cup chopped celery (chopped red or green bell pepper optional)
- - lettuce leaves
- 1/3 cup chopped peanuts
How To Make curried chicken and peanut salad

Step 1In a large bowl combine yogurt, mayo, curry powder salt and pepper; mix well.

Step 2Fold in chicken, grapes, water chestnuts, celery and bell pepper (if using). Cover and chill thoroughly.

Step 3To serve, line 6 plates with lettuce leaves. Spoon chicken mixture over lettuce leaves. Top with chopped peanuts.
