Ingredients

  • 1/2 cup plain, nonfat yogurt
  • 1/4 cup light mayonnaise
  • 1 - 1 1/2 teaspoons curry powder
  • 1/4 teaspoon salt
  • 1/8 teaspoon pepper
  • 3 cups cooked chicken, chopped
  • 1 cup seedless red or green grapes, halved
  • 1/2 cup water chestnuts, chopped
  • 1/2 cup chopped celery (chopped red or green bell pepper optional)
  • - lettuce leaves
  • 1/3 cup chopped peanuts

How To Make curried chicken and peanut salad

  • Step 1
    In a large bowl combine yogurt, mayo, curry powder salt and pepper; mix well.
  • Step 2
    Fold in chicken, grapes, water chestnuts, celery and bell pepper (if using). Cover and chill thoroughly.
  • Step 3
    To serve, line 6 plates with lettuce leaves. Spoon chicken mixture over lettuce leaves. Top with chopped peanuts.
