Doing a little experimenting to see exactly what I can and cannot eat. This is hard! my husband liked the salad, but complained that it needed Ranch dressing.

Ingredients

  • 8 ounces shredded oven roasted chicken
  • 1 stick celery
  • 1/2 large cucumber, peeled and diced
  • 2 ounces red onion, diced
  • 2 cups packed salad greens
  • DRESSING
  • 1/4 cup white vinegar
  • - salt and pepper to taste

How To Make crunchy chicken salad

  • Step 1
    Shred your chicken or cut it into little chunks. Slice the celery and red onion, peel and dice the cucumber.
  • Step 2
    Place the chicken, celery, cucumber and red onion in a bowl. In a small bowl stir together the vinegar, salt and pepper. Pour over the chicken and veggie mixture and stir to coat the chicken and veggies.
  • Step 3
    Divide the salad mix in half, and place on two plates. Divide the chicken and veggie mixture in half and place on top of lettuce.
