Doing a little experimenting to see exactly what I can and cannot eat. This is hard! my husband liked the salad, but complained that it needed Ranch dressing.

Ingredients
- 8 ounces shredded oven roasted chicken
- 1 stick celery
- 1/2 large cucumber, peeled and diced
- 2 ounces red onion, diced
- 2 cups packed salad greens
- DRESSING
- 1/4 cup white vinegar
- - salt and pepper to taste
How To Make crunchy chicken salad

Step 1Shred your chicken or cut it into little chunks. Slice the celery and red onion, peel and dice the cucumber.

Step 2Place the chicken, celery, cucumber and red onion in a bowl. In a small bowl stir together the vinegar, salt and pepper. Pour over the chicken and veggie mixture and stir to coat the chicken and veggies.

Step 3Divide the salad mix in half, and place on two plates. Divide the chicken and veggie mixture in half and place on top of lettuce.
