This is a favorite of my family that is easily switched up with different seasonings to change the flavor of the chicken. I used a combination of picante sauce and brown sugar or honey and dijon mustard to give us a change. Great for working moms who need the main course finished by the time they get home!

Ingredients
- 4-8 - chicken thighs
- - salt and pepper to taste
- - garlic powder to taste
- 1 - onion, chopped or ringed, your choice
- 1-2 - red, green or yellow bell pepper, sliced or chopped
- 1-4 teaspoon minced garlic
How To Make crock pot chicken

Step 1Rinse chicken and pat dry with paper towels. Place skin side down in crock pot. Sprinkle salt, pepper and garlic powder over chicken.

Step 2If you choose to add other flavors, do so before the onions and peppers. Spoon garlic onto chicken. Top with onion rings and bell pepper slices.

Step 3Place lid on slow cooker and cook for 8 hours on low. When you get home, turn off crock pot and let the chicken sit to keep warm while you throw rice in the cooker and cook a few veggies to go with this. Place the chicken on a serving plate, top with extra onion or pepper for garnish.
