creamy taco mac

I Just found this recipe on pintrest yesterday. I tweaked it a little bit to use up what I had, and make it a little healthier. It was a total hit. Sorry I couldn't upload a photo, I couldn't find the cord for my camera but I assure you it is easy on the eyes.

Ingredients
- 1 pound ground chicken
- 8 ounces whole wheat rotini pasta
- 2 teaspoons minced garlic
- 14 ounces caned rotel tomatoes, drained
- 3 ounces reduced fat cream cheese
- 1 teaspoon paprika
- 1 teaspoon chili powder
- 1/4 cup water
- 1/2 small onion/ i used a yellow onion
- 1 tablespoon olive oil
- 1 teaspoon ground pepper to taste
How To Make creamy taco mac

Step 1Cook pasta, drain, and set aside.

Step 2In the mean time add your olive oil to a saute pan and add onion caramelize on medium heat, then add ground chicken and cook on medium high heat until no longer white.

Step 3Mix in garlic and cook for about 1 min. Then add the tomatoes,chili powder, and paprika. simmer over medium-high heat for 5 min.

Step 4stir in the cooked pasta, cream cheese, Greek yogurt, and water. stir until cheese is melted.

Step 5simmer over medium-low heat 3-5 min. Then Enjoy!
