I Just found this recipe on pintrest yesterday. I tweaked it a little bit to use up what I had, and make it a little healthier. It was a total hit. Sorry I couldn't upload a photo, I couldn't find the cord for my camera but I assure you it is easy on the eyes.

Ingredients

  • 1 pound ground chicken
  • 8 ounces whole wheat rotini pasta
  • 2 teaspoons minced garlic
  • 14 ounces caned rotel tomatoes, drained
  • 3 ounces reduced fat cream cheese
  • 1 teaspoon paprika
  • 1 teaspoon chili powder
  • 1/4 cup water
  • 1/2 small onion/ i used a yellow onion
  • 1 tablespoon olive oil
  • 1 teaspoon ground pepper to taste

How To Make creamy taco mac

  • Step 1
    Cook pasta, drain, and set aside.
  • Step 2
    In the mean time add your olive oil to a saute pan and add onion caramelize on medium heat, then add ground chicken and cook on medium high heat until no longer white.
  • Step 3
    Mix in garlic and cook for about 1 min. Then add the tomatoes,chili powder, and paprika. simmer over medium-high heat for 5 min.
  • Step 4
    stir in the cooked pasta, cream cheese, Greek yogurt, and water. stir until cheese is melted.
  • Step 5
    simmer over medium-low heat 3-5 min. Then Enjoy!
