creamy garlic/spinach chicken
This recipe is so versatile, this is my simple version...you can add in sun-dried tomatoes, mushrooms to make it hardier...serve over rice or noodles.

Ingredients
- 4-6 - chicken breast cutlets
- 2 tablespoons butter
- 1 teaspoon olive oil
- 5 cloves garlic, smashed
- 1 teaspoon italian seasoning
- 1 cup chicken broth
- 1 cup milk
- 1 tablespoon cornstarch
- 2 cups spinach, fresh chopped
- - salt and pepper
How To Make creamy garlic/spinach chicken

Step 1salt and pepper the cutlets, add 1 tablespoon of the butter and the olive oil in a saute pan.

Step 2Brown cutlets on each side ( about 1 min per side) set aside.

Step 3In same pan after you remove the cutlets, add the garlic, chicken broth, milk & cornstarch ( first mix the milk and cornstarch, to make a slurry) now whisk in slowly it will form a nice light gravy...add chicken back in and top with the spinach...cover and simmer 20 mins...chicken will finish cooking in the delicious sauce.
