This recipe is so versatile, this is my simple version...you can add in sun-dried tomatoes, mushrooms to make it hardier...serve over rice or noodles.

Ingredients

4-6
chicken breast cutlets
2 Tbsp
butter
1 tsp
olive oil
5 clove
garlic, smashed
1 tsp
italian seasoning
1 c
chicken broth
1 c
milk
1 Tbsp
cornstarch
2 c
spinach, fresh chopped
salt and pepper

How to Make Creamy Garlic/Spinach Chicken

Step-by-Step

  • 1salt and pepper the cutlets, add 1 tablespoon of the butter and the olive oil in a saute pan.
  • 2Brown cutlets on each side ( about 1 min per side) set aside.
  • 3In same pan after you remove the cutlets, add the garlic, chicken broth, milk & cornstarch ( first mix the milk and cornstarch, to make a slurry) now whisk in slowly it will form a nice light gravy...add chicken back in and top with the spinach...cover and simmer 20 mins...chicken will finish cooking in the delicious sauce.
