1Cut chicken into bite size pieces. Heat oil in large skillet. Add chicken and onion and cook until chicken is almost tender.
Add green beans, undrained tomatoes, carrots, potatoes, rice, salt and pepper and mix gently.
Pour water over top of mixture. Cook, covered over medium heat stirring occasionally for 20 or until rice is tender.
Sprinkle mixture with cheddar. Let stand, covered for 5 minutes.. If you like it cheesier you can add a little more cheese. Also, I add a little chicken broth to the water while cooking to add a little more flavor..
