These are great sandwiches for picnics or for a cool summer brunch. You can make these with tuna or chicken if you want. I ate lunch at a restaurant called The Mustard Seed. They had great tuna sandwiches with grapes in them. I loved it, so I came home and added my favorite ingredients to make it just perfect!

Well, who would have thought dill pickles with grapes would make such a great sandwich. We tried this with tuna and loved the combination of flavors and textures. We bet chicken would be tasty too. This is a great summertime sandwich. If you want it extra creamy, just add a little extra Miracle Whip.

Ingredients For cool cucumber sandwiches

  • 1 lg
    cucumber, peeled and diced
  • 1 lg
    tomato, diced
  • 1/8 c
    onion, diced
  • 1/8 c
    walnut pieces, optional
  • 1/4 c
    red grapes cut up
  • 1 can
    tuna or chicken, drained well, lg can, optional
  • 1/2 tsp
    salt and pepper
  • 1/8 c
    Miracle Whip
  • 1 lg
    dill pickle, chopped
  • croissant bread
  • bibb lettuce leaves

How To Make cool cucumber sandwiches

  • Sandwich ingredients in a bowl.

    Combine all the above ingredients in a large bowl.
  • Ingredients mixed together.

    Mix well.
  • Toasting croissants.

    Toast croissant bread.
  • Sandwich assembled on a croissant.

    Place lettuce on croissant and spread with cucumber salad. Serve.
