Another easy/peasy chicken recipe, constructed from ingredients you probably have hidden in your pantries, cupboards, and fridge. The nice thing about this dish is that you can prep it the day before, then cover, stick in fridge, and cook it the next day. Great tasting chicken and taters, from kitchen-to-table in under an hour. So, you ready… Let’s get into the kitchen.

Ingredients

  • PLAN/PURCHASE
  • THE TATERS
  • 1 large potato, russet variety
  • 2 teaspoons olive oil, extra virgin variety
  • 1 - 2 pinches dried oregano
  • 1 - 2 pinches dried parsley
  • salt, kosher variety, fine grind, to taste
  • THE CHICKEN
  • 2 cloves garlic minced
  • 2 tablespoons lemon juice, freshly squeezed
  • 1 teaspoon olive oil, extra virgin variety
  • 1 teaspoon salt, kosher variety, fine grind
  • 1/2 teaspoon black or white pepper, freshly ground
  • 1/2 teaspoon paprika, smoked variety, divided
  • 1/2 teaspoon dried oregano
  • 1/2 teaspoon dried thyme
  • 1 - 2 pinches cayenne pepper, or to taste
  • 2 medium chicken thighs
  • 2 medium chicken legs

    PREP/PREPARE
  • Step 2
    For this recipe, you will need an ovenproof skillet, medium-size baking dish, or rimmed baking sheet.
  • Step 3
    Gather your ingredients (mise en place).
  • Step 4
    Place a rack in the middle position and preheat the oven to 425f (220c).
  • Step 5
    THE TATERS
  • Step 6
    Add the olive oil, oregano, parsley, and salt to a bowl.
  • Step 7
    Place a pot of lightly salted water over high heat and bring to a rolling boil. While the water is coming up to the boil cut the potato into cubes about 1.5 inches (4cm). Toss into the boiling water and cook for 5 minutes.

    Thoroughly drain, and then toss with the oil and spices.

    THE CHICKEN

    Add all of the spice ingredients to a bowl and mix to combine.
  • Step 11
    Place the chicken into an ovenproof skillet baking dish, or baking sheet, drizzle on the spice ingredients, and rub it into the chicken. Then, add the taters.

    As you can see from the photo, I like to sprinkle on a bit of additional smoked paprika and a touch of salt… up to you.

    Place in the preheated oven and cook until the skin on the chicken is crispy, and the internal temperature (instant-read thermometer) reads 165f (75c), about 45 – 50 minutes.
