Ingredients

  • 1 lb
    chicken breast halves, skinless and boneless cut into bite size pieces
  • 1 can(s)
    light coconut milk
  • 1 Tbsp
    fish sauce
  • 1 Tbsp
    red curry paste
  • 4 tsp
    cilantro, fresh, chopped
  • 4
    lime wedges

How to Make Coconut Curry Chicken

Step-by-Step

  1. Heat a large nonstick skillet over medium high heat. Coat pan with cooking spray. Add chicken and cook until done, stirring occasionally. Transfer chicken to plate.
  2. Add coconut milk, fish sauce, and red curry paste to pan, stirring with a whisk to loosen brown bits. Return chicken to pan. Bring to a simmer for 8 minutes, stirring occasionally.
  3. Serve over rice with cilantro and lime wedges.
