How to Make Coconut Curry Chicken
- Heat a large nonstick skillet over medium high heat. Coat pan with cooking spray. Add chicken and cook until done, stirring occasionally. Transfer chicken to plate.
- Add coconut milk, fish sauce, and red curry paste to pan, stirring with a whisk to loosen brown bits. Return chicken to pan. Bring to a simmer for 8 minutes, stirring occasionally.
- Serve over rice with cilantro and lime wedges.
