Ingredients
- 1 pound chicken breast halves, skinless and boneless cut into bite size pieces
- 1 can light coconut milk
- 1 tablespoon fish sauce
- 1 tablespoon red curry paste
- 4 teaspoons cilantro, fresh, chopped
- 4 - lime wedges
How To Make coconut curry chicken

Step 1Heat a large nonstick skillet over medium high heat. Coat pan with cooking spray. Add chicken and cook until done, stirring occasionally. Transfer chicken to plate.

Step 2Add coconut milk, fish sauce, and red curry paste to pan, stirring with a whisk to loosen brown bits. Return chicken to pan. Bring to a simmer for 8 minutes, stirring occasionally.

Step 3Serve over rice with cilantro and lime wedges.
