Ingredients

  • 1 pound chicken breast halves, skinless and boneless cut into bite size pieces
  • 1 can light coconut milk
  • 1 tablespoon fish sauce
  • 1 tablespoon red curry paste
  • 4 teaspoons cilantro, fresh, chopped
  • 4 - lime wedges

How To Make coconut curry chicken

  • Step 1
    Heat a large nonstick skillet over medium high heat. Coat pan with cooking spray. Add chicken and cook until done, stirring occasionally. Transfer chicken to plate.
  • Step 2
    Add coconut milk, fish sauce, and red curry paste to pan, stirring with a whisk to loosen brown bits. Return chicken to pan. Bring to a simmer for 8 minutes, stirring occasionally.
  • Step 3
    Serve over rice with cilantro and lime wedges.
