How To Make clay pot / honey, curry chicken

1For Clay Pot if it is glazed you do not have to soak it, but if not soak in cold water for 1/2 hour prior to use. When using clay pots do not preheat ovens as it will cause the pots to crack, also add an additional 50 degrees to recipes.

2Rinse and and drain chicken pat dry with paper towel. In bowl mix all ingredients except vegetables together and set aside. Peel potatoes and quarter, peel onion and cut into 1/8ths, carrots.

3After chicken has dried to touch take, honey mixture and glaze inside and all of outside of chicken, making sure to place a large amount inside of chicken. Place chicken in the middle of clay pot adding vegetables all around and placing some inside the chicken as well. But do not let vegetables be higher than the chicken in the pot itself. Add water / chicken broth place in 400 degree oven and cook for 2 hours, taking the lid off the pot the last 5 minutes or so to brown the chicken if desired. You may also serve with a warm helping of honey if desired.
