This recipe has only 6 ingredients, can be cooked in one pan (not including the rice) and my family loves it.

chicken breasts
1 bunch
cilantro, fresh
2 medium
onions, yellow, medium chopped
jalapenos, fresh chopped
garlic cloves chopped
1/2 stick

How to Make Cilantro Chicken and rice


  • 1cook onion and garlic in melted butter add 1/2 of the cilantro and chopped jalapeno. Put the chicken, salted and peppered to taste, meaty side down (I like to skin the chicken) on top of veggies and cook for about 20 minutes or until almost done. Turn the chicken over and add remaining cilantro and finish cooking. Chicken is done when it reaches an inside temp of 185. Serve over rice
  • 2I like to make an easy salsa to serve with this recipe. Corn or flour tortillas go great with it too
  • 3SALSA

    2 cups chopped fresh tomato
    1 cup finely chopped onion
    1 cup finely chopped cilantro
    1 finely chopped jalapeno
    salt, pepper and lime juice to taste

    mix together and serve with cilantro chicken. YUM
