Something a little different than BBQ sauce for your chicken. I came up with this recipe because I wanted something I could marinate the day before or the morning of the day I would be grilling. All the work is done ahead of time. All that's left is the grilling. Enjoy

Blue Ribbon Recipe

This easy balsamic marinade makes for some deliciously moist and tender grilled chicken. The marinade has a mild flavor and doesn't overpower the chicken. It's a slight tang. This can easily be doubled or tripled. A yummy way to jazz up grilled chicken.

We used thin cut filleted breasts and 7 minutes per side was perfect. Cooking time will vary based on the thickness of the chicken. Use a meat thermometer to make sure the chicken is cooked to 165F.
  • Olive oil, balsamic vinegar, Italian seasoning, and Dijon mustard whisked in a bowl.
    Step 1
Whisk together olive oil, balsamic vinegar, Italian seasoning, and Dijon mustard.
  • Chicken and marinade in a resealable bag.
    Step 2
Pour marinade over chicken in a zip top bag. Refrigerate for 4-24 hours.
  • Grilling the chicken.
    Step 3
Grill over direct heat for about 7 minutes per side.
  • Grill marks on a chicken breast.
    Step 4
This marinade can easily be doubled or tripled for family size packages of chicken. *Helpful Hint* I filet my chicken so it cooks more evenly.
